You may want to add a new set of throttle cables to the list. Your current cables will work but will be about two inches longer than than the stock ones for a carburetor model.
I did this conversion recently on a 2001 Road King and am very pleased with the noticeable increase in torque and throttle response compared to an M&M tuned with a Screaming Eagle Race Tuner.

As I understand the -99 version of the carb has changed internal passages and the earlier version -96 or earlier is preferred.
I have only used the earlier versions so don;t know if that is correct or a fable.
a perfect used CV carb is easy to find as many riders replaced with other brands.
the key to examining a carb is if the plug over the idle adjust is intact, then it hasn't been monkeyed with
