Went for a short ride through Dutch farm country, aka Lynden, WA - beautiful day, tall corn and the Dutch bakery has these poffertjes inspired muffins........not really authentic but oh, are they good. Sort of spice cake like with filling that tastes like a cross between custard and cream cheese frosting.

If you are ever here in Holland, MI and want some good, authentic Dutch bakery goods you have to go to De Boers Bakery. You'll leave about 5# heavier , and they have good meals also. Have to try the kraklingen .

Since Holland, MI is a lot closer to me than Washington (state) is, I guess I'll have to make my way over there now that I have a good recommendation as to where to eat!

.......when grabbing one of those and stomping around with a hot coffee on a cold morning as we looked at the other 'bikes before the ride was common.
Sadly, the coffee, stomping and looking are all that's left.
Sigh. What we give up to loose a little weight and lower our cholesterol.
Sure looks great, tho.

I am confused by that picture taken in Lynden; what is that blue stuff towards the top of the photo? Don't recall ever seeing that before.



Truth is-I actually miss WA after living there for 37 years-retiring to Port Angeles in 2 yrs-at least that is the plan as of today.
