Se cans are good and cheap. look on Ebay.
K$n, good choice
drag bars, ditto.
I have all of the above on my fats and I dig it. I'm 6'3 and the shorty bars make for good positioning. I kept my floorboards though.
Key to good mods, take it slow and easy to make sure you are doing something that you actually want. don't change for change sake.

I don't know what you are budgeting for those mods but here is a few idea's:

Drag bars:
Check out the fat bob stock bars and risers. You can buy new take offs for under 100 including the risers...very comfy and are pretty close to the look of drag bars.

Pipes:
If you like it loud, don'T buy SE pipes, they are EPA legal and are not much louder then stock. The best performance pipes will be 2-1. I have the vance and hines pro pipe and love them. I suggest whatever you get, get the full exhaust, they aren't that much more then slip ons and will give you much better performance.

A/C:
Big sucker stage one can be had on e-bay for just over 100 for the whole system and includes the K&S type filter.

Well thats a start for u.
