Any suggestions before I start this process? I am putting on 12.5" Wild 1's Chubby apehangers. I have the handlebars, I just need to get the cables and whatever else any of myfellow HOG brothers suggest.
What is the best cable length? Not to long, not to short?

If you want I can give you the number to the guy that did mine. He can point you in the right direction, order the parts at a discount and have them shipped to you.
Wild1 recommends this for their 508's and I'm assuming the apes too. They say the stock clamps are not strong enough. You may also want to look here and especially here for help and tips for installing. I found these more helpful than the manual.
I've just put the 12.5" Chubby apes on my RKC. You will need +6" cables and wires....that makes it just right. I used the one piece clamp from Harley Davidson, it was the cheapest one they did. I had to slightly modify the clamp though.
If you are about my height, 5' 11"...these bars will put you in a perfect riding position. I love them.
Just did the 10" apes. You'll need to extend the switch wiring and get the +6" cables. I was able to get by with +2" throttle/idle cables but of course I have less rise.

I'm about to do 8" apes. I'd be interested to hear how much you extended the switch wiring for your Wild1s.
I've been told I shouldn't have to extend mine.
I put 10" Chubbys on my RKC and used 4"+ on the throttle, idle and brake, 3"+ on the clutch, and soldered in 7" into the wiring. You should be able to use the same. You can calculate about what you will need by adding the increased rise and pullback to the stock. Don't forget to stagger your solders.
