Anyone know of or have a step-by-step fork removal/rebuild video? Looking for something for my 14 SG. The ones I've seen on youtube are decent but it always seems like something is missing or it's just not as thorough as I would hope.

FIXMYHOG.COM has some great videos. Search around for coupon codes, I got a year of access for like 2$, but it renews MUCH higher so keep an eye on your subscription. His voice gets to me after a bit but other than that gets a thumbs up.
Try this video. He's installing Legend Axeo cartridges, but it's pretty thorough for what you are asking for. I used it as reference and my manual to install the same and chrome lowers. If you are doing a complete disassemble, don't forget the rebuild kit. I did buy the H-D fork rebuild kit, $55 each x 2, rather than another brand. If you are rebuilding cause your front end is mush, search the forum for options. Lots of good info available.

I don't have a service manual but was planning on getting one so I know all the torque specs, etc when reassembling. In regards to guidance, not sure. Never done something like this and just want to be sure I have a good idea of what it takes before I start breaking down the bike.
I normally do my own work but this I may pay to have done. I think you need a tool to get the allens out of the lowers an a seal driver to install the seals. I'd like to install a set of Ricor's an the required fluid an I figure that would be the last maint on the front for a long time.

Its no hard to do, you might need a helper when you go to put the fork tube cap back on, you can gets these tools on Ebay:.
