Thats probably 6 hours. seems a bit much, unless it includes a full dyno tune? I would bet it should take 4 hours to install the cam and exhaust. then 2 hours on the dyno
Is it a full cam kit or just the cam swap itself? For a whole kit that seems about right. Can you list all the things they're doing? If it's also including the air filter etc then that makes more sense.
Make sure you are verifying with the dealer if that quote is reusing your solid pushrods or installing adjustable ones. There is a 2hr difference in quoted labor between the 2 as one involves removing tank, oil lines, harness, rocker covers, rocker arms, additional gaskets, etc.
When I had a dealer do my Stage 2, I supplied all the SE parts myself and just paid labor. I called around and received quotes ranging from $300 to $1200....For installation with adjustable pushrods. Ive seen dealers post winter specials for Stage 2 install, $750 OTD (parts and labor...but not including additional parts like a tuner, exhaust, intake, just Stage2 SE cam kit and labor)
Since then Ive personally changed out my cam 4 times and done a DIY big bore kit. The quote for $700-800 labor just to do a simple cam install seems high, but is actually within the range of quotes I encountered.

When ya’all are comparing labor time to do a job, you need to include more than wrench time. You need to start the clock from the time the technician picks up the work order at the service desk, until he returns the completed work order to the service desk.

The tech get book time for the Job, book says 5 hours, he gets paid for 5 hours. If ti takes him 3 cause hes good, or 8 cause he sucks, he gets paid 5 hours, and you pay for 5 hours.
I just did a stage 2 on my '18 Heritage 114. I also did S&S lifters and cuffs. total parts $750, with SE cam and bearing. Tech charged $400 and upgraded to 2020 oil pump under extended warranty. I am over the moon with the outcome, plenty of punch, but polite and well-mannered cam.
