Sandy the bike is monitored as soon as she's hooked up and running, most every parameter is known so they're much more likely to save a bike from meltdown than to cause it.

In my opinion and experience its much better to have a bike properly tuned on a dyno than not. I had a fresh 128 build broken in right on a dyno even.
Either way, a knowledgeable tuner is not going to push a bike to catastrophic levels if they see something off on the parameters .
