I have the Wireless Headset Interface Module installed.

By my understanding, if using the WHIM, the only bluetooth headset that will provide stereo sound is the Harley branded Sena.
That is correct. The WHIM is programmed to see if the BT headset that it's connecting to is a Harley headset. If no, then the WHIM automatically disables stereo functionality.
If you're not using the WHIM, current opinions are that the Cardo Packtalk Bold or Packtalk Slim is probably one of the best choices. If quality stereo music sound is important to you, Cardo now has both series available with JBL helmet speakers. They sound great!

Not 100% sure on that one. When you install the WHIM, the Infotainment system has to be "flashed" to recognize it, so I assume that the dealer can reattach the Digital Technician II computer to the port on your bike and "unflash" it. It would still be there, so you wouldn't have to pay the labor to remove it, but it would no longer work.
On the other hand, you would then have no way to BT your headset to the bike, so you would either have to buy the Harley corded mic/headset setup, PLUS the plug accessory kit if you don't have an Ultra, or just BT your headset directly to your phone and don't use the bike's electronics at all.
