I need a whatucallit
there are lots of sources for the jumper, I'm guessing the ultra didn't come with a WHIM?

Second, do you have CarPlay working on your bike now, by plugging in a head set in to the bike's headset port and plugging your phone into the bike's USB media cable?
If the answer is "yes" to both those questions, the the "jumper" just frees you up from having to have a headset (mic) plugged in, to get CarPlay to be available on the GTS.
I strongly suggest getting CarPlay working with the headset plugged in to the bike's headset port and the phone plugged in to the usb media cable first... then adding the jumper. Because if you're having issues getting CarPlay to be available on the head unit, that needs to be sorted out before doing the "jumper hack". The jumper just "hacks" the headset (mic) requirement of CarPlay, it won't fix any other issue.
As far as the "bike GPS", are you asking will you be able to still use the GTS's Navigation? If so, you can have CarPlay and still use the bike's Navigation, and/or use something in CarPlay... or switch back and forth. Either, both will be available. I actually like the bikes Navigation, and regularly use it, while listening to music via CarPlay. I have also used Maps in CarPlay. But you'll be able to use whatever/whichever you want

you just have to plug in one of the headsets that came with your bike first, and then plug your phone into the usb media cable on the bike. I would suggest you try that in the garage to be sure your bike is already "configured" for CarPlay. That way when you get the "jumper" and put it in, it is ready to go. Also, if you get CarPlay working first, with a headset, if you try the jumper and it don't work at first... you know CarPlay was already working with a headset... kinda helps in the trouble shooting when you go to install/test the jumper. Whoever helped you setup CarPlay in the car, get them to help you do it with the bike too lol Then, if you get it working with the headset first, I bet it goes so much more smoothly after you get the jumper in place. The only thing the jumper does is make it where you do not have to plug a headset in to get CarPlay to be available (You still have to plug the phone into the bike's USB media cable though).
That screen shot is what mine looks like when CarPlay connects and working right on the GTS head unit. When CarPlay is connected the "Phone" icon is replaced with the CarPlay icon, like it is in that pic. You will still have to plug the phone into the bike's usb media cable. Then Pandora should work on your bike (thru CarPlay) like it does in your car's CarPlay. You can use the bike's Navigation if you want, while listening to Pandora lol CarPlay doesn't "take over" everything, basically it just gives you other options in addition to what you already have.
Some advice the guy that put the head unit in my truck gave me.... once you get it working, buy a 6 pack, and go home and play around with it in the driveway, while trying figure this and that out... and seeing how to get to this and that..... etc
He said over the years he's had several customers with new stereos that were playing with them while driving home, and not paying attention, and drive right into the back of someone
