Have you tried turning off Bluetooth when plugged in? I also bought a hi performance cable rated for Android auto. Solved my issues.

You did not mention is you were using the plug that allows you to use CarPlay without a headset, or a headset with the WHIM; I am assuming the later because that is what likely causes the problem.
I had the same problem. This 2 part solution has worked consistently for me:
1. Unpair the headset from the phone. The phone should be paired with the infotainment system, the headset should be paired to the WHIM only. You can do everything with this configuration.
2. Always turn on the headset first, before you start the bike (or turn the ignition switch to AUX) and before you plug the phone into the USB. If CarPlay does not find the headset with mic, it will not start.
I had the same issue. Turns out it was the cable I was using. An Apple iPhone cable routed through the console so I could use a quad lock handlebar mount. I switched to a 6-inch cable and just use the built in phone holder in my Street Glide fairing. No more disconnects.

similar experience with Pixel 6a/Android Auto and Sony 7000 also HDHU.14 and .14si....
used to work fine, then like you 10mins!! 1hour!!! 10feet!! drove me NUTS! always ran a 6ft branded cable fine in my bike, in the car also been short branded cables. then tried short/tiny/string still no joy. made using maps impossible!
tried all the bluetooth remove/reset/hold left finger in air
finally stumbled on a suggestion to use an Anker Powerline II USB-C to USB 3.1 Gen2 Cable (3ft)
...and not had a single problem since!
I don't know what changed, but I think more data is being passed from the phones to the head-units and so the older cables are no longer good for the CP/AA job. The Anker cable is thicker, that's all I can tell ya. It worked for our 2 phones in the car and on my bike
YMMV
