I have just had the bike repainted.
What steps should I take to produce a high gloss finish?
The bike is clearcoated.

The last steps the shop should do after clearcoat is wetsand and buff. If it doesn't look high gloss now then there's something wrong. I'd ask them if they need to buff it more.
The only thing you should need to do to a new paint job is protect it. Usually it's suggested to wait 30-60 days before using anything that doesn't say "Paint shop safe". Reason being the paint gasses for a while and you don't want to trap that with a carnauba or similar product.
For safe paint protection you could do something like a glaze. Like 3M Imperial Hand Glaze, and I know there's a Meguiars option too. Make sure it says "Paint shop safe" on the bottle.
