Not sure about the softails, but I used 1/8 inch. Seems pretty solid

What did you use to make it? Cold rolled, stainless? And what diameter?

5/8" cold rolled and 1/8" plate for the sides.

Pretty much, toughest part was keeping it all symmetrical. Start at the top and work your way down doing each bend in pairs and verify it still matches your pattern. Used cardboard to cut out a template for the side plates. Use masking tape to protect the fender during the fitting phase.
