In KY, your insurance info is already in the DMV computer. Basically before the cop gets out of his car he has already run your plate and knows who to expect, if that plate number is current and if insurance is in force. Even if you don't have all the paperwork on you as long as your ID matches the name and address and your plate sticker is current, there is no ticket written. It's a waste of the courts time to appear and show what everyone already knew.
I take a picture of my registration and proof of insurance with my phone. but if the LEO needs to "take the paperwork back to the car", I keep the actual paperwork in a waterproof pouch (like for boat docs) that I keep in my fuse box.
I used to keep the pouch in my bags but found that all the stuff I can accumulate over time tended to tear up the pouch and docs.
I tooled up a tank bib, with a pouch in it. Tooled leather doesn't last so long out in the elements though... time to build a new one... maybe use fake leather this time... or something like that... new bib won't have the 'wings' on it this time..

Last time I got pulled over in KY, the cop didn't even ask for insurance & registration, just my DL. I guess since it was registered in my name he could tell that everything was current.

CA law reads to the effect of "Proof of registration and insurance", so the particular cop may not like it, but you are adhering to the law, so if needed court SHOULD pan it out properly.
But it is CA....
I keep copies of my registration and insurance in my wallet for all three vehicles. One piece of paper with all of it. takes up the same amount of space as all 6 pieces of paper, but easier to get to.
