Not sure why you fill the need to wide open the throttle it at that RPM but if you must, learn to down shift and of course match the engine speed/mph travel with the throttle as you come out with the clutch and continue opening throttle. It is almost impossible to have a finely tuned engine to match that requirement you are putting to it.. Even changing the timing electronics instant still requires the first few strokes of the motor for it to catch up to the requirements to catch up to the intake fuel and exhaust gasses that simple do not happen instantly like an electrical impulse. The noise you are hearing over that that rpm level and wind noise can be quite damaging. Your engine may need a complete overhaul and you should talk to your local dealer immediately before it completely destructs.
I do not ride like this i just noticed that sound the other day while climbing a hill then i tried different things to identify the problem. I have a big fairing who does kill alot of wind noise and kind of "reflect" motor sounds. I am installing a new exhaust and air cleaner and i will get it finely tuned on the dyno next week.
I did get the bike finely tuned on the dyno right after i installed cams, air cleaner and exhaust. The bike run great and i scored 99hp and 107torque. Good numbers i believe for a 103. I can still hear the noise at 2700-3200 RPM tho. I dont think it is pinging we did change the timing in that rpm zone by 4', i did try octane booster today. Nope it is still there.
Some tech said it can be camshaft overlap noises at that specific rpm. I also heard motor heat and material expanding. I wish i would have more experience and know more things but that is not the case. My warranty end in like 1 week i dont know what to do.
Just throwing this out there, but there's many threads on that tic/sewing machine noise on HDForums; I've got it at 2300 -2600 RPM. I'm pulling the rocker covers soon to install Trask Mystfree breathers and I'll be doing Rock Out's while I'm in there. Here's one of the threads, don't know if it's the same issue you've got but might be worth a look...
If you really want to hear noise, try riding without your helmet. Back in the day, I used to ride to Connecticut so I could ride without a helmet. Geeeze Talk about engine noise.
Was the sound heard during the dyno runs? If it's ONLY heard at WOT, then it's still likely to be pinging. The tuner needs to identify exactly where it's happening and retard the timing there. It can take a lot of logging runs to get all the pings out, and even then it still may happen from time to time. I've just accepted that all Harleys will ping sometimes. Light pings where you don't actually feel any power loss aren't the end of the world and aren't going to blow up your engine. The ECU will temporarily retard timing when it detects pings.
One thing that really helped mine was to retard timing across the board based on intake air temp. On a hot day where you're not moving very fast your intake air temp can easily get up to 150F or more. Pinging always gets worse the hotter it gets. Using my powervision tuner I increased spark retard more aggressively when the temps start to rise.
