Cable clutch uses a cablepulled by the leve to engage... hydraulic uses fluid and pressure instead. Same as the difference between a cable brake and hydraulic brake (like on bicycles).
if you are looking for something like the visual differecen, can't help ya, but I figure they can't look too much different. If you are looking for something more technical, sorry... can't help ya there either
