The maintenance items vary by mileage. They're spelled out in the manuals and include things such as wheels bearings, spokes, brakes & fluid, belt tension, front forks, neck bearings, swingarm bearings, etc.

Don't forget your fork oil & brake fluids.

Hyd. clutch system too ( if you got that.)
Better yet, go thru your Owner's Manual. It will lay out everything that needs doing. Besides, it's a great way to get to know your motorcycle.

oil every 5K. Primary every 10K and Trans every 20K according to manual. Mine as well do the transmission and primary though at the same time since they take the same kind of oil (different than what goes into the engine) this is according to my manual so if anyone disagrees then take it up with harley.

Your engine oil gets contaminated with combustion byproducts primarily, and some wear from the engine operation. The transmission and primary lubricants do not experience these contaminants and may just get some wear particles or dirt introduced. As many others have said, best bet is to follow the manufacturers recommendations. I usually change engine oil two or three times to the transmission and primary.

Fork oil is every 50,000 miles. If you're riding 25,000 miles a year, then yes.

Also, any oils with a dipstick should be checked for looks, smell, feel. That will let you know more about when to change your oil. The mileage in the service manual is a general guideline. Get to know your bike and its bad habits.
