It's an 08 Nightster, lowered an inch in the rear. I have a vertical license plate bracket on one side and need to extend the bolt .5" or so to fully thread a nut.
Also, when my wife rides with me we bottom-out although together we only way less than 300lbs. will stiffer shocks solve that or do I HAVE-TO remove the 1"drop? i'm only 64" so i really like having a lowered bike.
Right now my shocks are extended but that obviously doesn't have much affect.
The adjustments on your shocks are for preload, not height. So when you ride two-up you should adjust the shocks to a stiffer setting. If you've already done that, there's not a lot more you can do. You don't have much suspension travel to begin with and getting a stiffer shock will make for a rougher ride.
One option is to go with a higher quality shock, and even one a bit taller may not change your ride height if the sag is adjusted right. Plus the ride will be more comfortable. You can also look into a seat that will lower you.
