Sissy bar
I've been looking for a 30 inch sissy bar for my 05 wide glide.
I've found this

So if I get one of those universal types like that, what kind of mounting side plate do I need to buy?

It depends on the shape of the bar and what bike you're on. Looks like it will be one of those buy the bar and then figure out what you need to mount it after.
This is significantly more money but it is very similar to what you posted but you pick out the mount for you bike and it works. I've been happy with the bar I got from them.

What is docking hardware? Do I need to buy that to install a sissy bar, or is it something that is already on my bike maybe? I know I need to buy side plates but I'm not sure if i need docking hardware or not.

Maybe docking hardware is only for detachable side plates?

Well, I found some used OEM side plates on ebay and bought those.
Hopefully this bar will work width wise.
