Are there any mods to the motor? Typically on a stock motor 46 or 48 pilot with a 190 or a 195 main jet.
You should never throw on a carb without knowing what jetting is in it..
The OP lives in Mora, NM, elevation 7,100 feet. Might effect the jetting.
The spark plugs are probably fouled. If the bike used to run good, install the jets from the old carburetor into the new carburetor and replace the spark plugs. If there are no other issues (ignition, vacuum leaks, sensors, bad fuel) the bike should run good.
It will not run now without choke, or that is how you were riding it until you replace carb?
You can get a drag rebuild kit for $50 for the carb. What sizes jets did you use, and do you have stock air cleaner and pipes?
Do you have spark?
yes have spark & im not sure on jet size I just put it in how I bought it
Its one of a few things
* Do you have SUSTAINED spark. I've seen initial spark, a carb flood and then respark or no spark
* Do you have crap in the tank or something clogged or collapsed in there
The above are the easy checks
* If good above then you have a problem
* its either a shot carb or a position sensor
* It could be in the electrical / charging system. Dumb but gotta ask - did you check the battery.

the battery is decent & I had jumper on it every time I tried starting it
Well you are going to have to look. Probably need to use those jets
And clean your old jets. Ultra sonic cleaner. Use strand of wire.

We don't have very much background here to give an accurate diagnosis. OP may be leaving the enrichener pulled out too long and fouling the plugs. Sometimes it's the little things that kill...

Like to know more. How long has he had the bike. Did it run good ever, what made him start replacing stuff

He should change both jets since he's in there. I don't know personally, but there's been talk about the poor tolerances of the jets in some of the Chinese knock-off carburetors and jet kits. I wonder if the needles are poor quality as well? If the diameter and taper isn't correct, that will cause issues, too.
