I love my bike too. Not sure which I would have chosen had they made the fatbob last year. I was at the dealer yesterday and they have a Fatbob identical to yours. I had to sit on it and feel it out. Felt good, love the factory bars but would have had the same issue with the mirrors.
Harley makes some long stem mirrors. They are in the catolog and most dealers should have them. I used to ride a sporty and a Dyna convertable that both had the extended mirrors. (56 inch chest-damn near a whiskey barrel). With the mini apes on the WG the regular length mirrors work fine.
