I have had three different 2-1 pipes and the one on my bike now is a Thunderheader. It is one piece. I had a Bassani 2-1 before that, and it was also one piece. I got both of these used, and am happy with the Thunderheader so far. My first one which I bought new when they first came out was a Python 2-1. This pipe is two pieces, and I think the end of the collector where the muffler bolted on was 2". The Python is just a Vance & Hines Pro Pipe with a prettier muffler so its safe to say that the Pro Pipe is a two piece as well. I Believe the D&D Fat Cat is also two piece, and it seems that everyone likes this pipe better than any of the others these days, but I personally have never had one.
As mentioned, the PYTHON 2-1 is a two piece and I was not happy with the POS clamp/collector heat shield that came with it, I put a heftier clamp on and wrapped my pipes.
