I'd say, first of all u have to be sure about your budget coz pipes are available from $100to $1000. Then get into details like style, sound & power. 2-1 pipes & slip ons will give u the best power gains, short pipes are louder & looses some low rpm torque for high high rpm HP. If u are looking for sound quality then I recommend V&H 2-1 big radius or Rinehart 2-1 or 2-2
Here's what I put on my 02 FXD which is essential like your 05. I've got Dyno Power low restriction slipon mufflers, similar to the S/E 1st generation mufflers. Very mellow until you twist the throttle. Once you get the intake set up to a stage 1 you'll need to rejet the carb and if you have EFI get something for fuel management to the rich side.
Forgot to mention, back pressure in your exhaust is your friend, it helps pull the exhaust out of the engine which makes room for the fresh charge of fuel/air mix coming in. Good luck.
If you want loud, then V&H short shorts, longs, or the big shot staggered with stock baffles will do the trick. they sound good AND loud. the quiet baffles reduce the noise level about three db - maybe. lowers the frequency a little so the sound is deeper.
the freq is what most people are actually after. the good deep rumble below probably 100hz. a pipe at 90db and 75hz would probably suit most people. one at 90db and 150hz or up would most likely sound raspy or just irritating.
i've heard the monster ovals (true duals) that really sound awesome, but have yet to hear a dyna or softail sound that good.
i have the V&H big shot staggered with the quiet baffles. they are still a little loud with too high a freq for my taste. next year, i'll probably put in quieter baffles with some more restriction to change the tone.
it's kind of like trying to tune the bass and treble levels to go with the volume on a stereo. some like more treble, but just about all like that bass sound.

if you want loud with a 2-1, look at the bassani road rage 2-1. or the supertrapp that you can tune with discs.
I've been struggling with what pipes to invest in, and after a year of looking and listening, I've opted to order the V&H Q-Series Double Barrels. They're going to give me the low tone rumble that I want, but be louder than stocks. I don't want to raise the roof off the neighborhood, or worry about going through rural town's who are looking to add money to their cash poor coffers off of bikers with loud pipes or teen's cars with loud radios. Anyway, I'm ordering them on Tuesday along with the PCIII and the SE/AC
then will have it dyno tuned.
