Default Changing Bars

I want to change the handlebars on my FXD but I've never done this before so have some questions for somebody who has done this. Just for info, they are not stock so have been changed before by the previous owner and they are internally wired.
My primary question is do you undo the wiring up at the switches or do you unplug them from the wiring harness somehow in order to pull the wires out of the bars.
Thanks for any help you may be able to give.

Ideally, unplug them.

I'm guessing here....... 99 SUPERglide. right??
