I run a windshield on my Superglide all the time. I rode a bunch of bikes at a dealer the other day and most of them didn't have shields. I had forgotten what a huge difference that makes. I rode a Springer without a shield and it majorly sucked. It felt like the wind was trying to pull my half helmet off and I was fatigued after about ten miles just from fighting the wind. I was happy to get on my Dyna when it came time to ride home.
Get a windshield, and I don't mean some cut down sporty version. Put a full sized shield on the bike and you can ride hundreds of miles with no strain. If looks are more important than comfort, just leave the bike in the garage and look at it. I'd rather ride mine.
You nailed part of your issue with riding gear. If you are riding with loose fitting jacket then its going to act like a parachute. Try more fitted jacket or a vest. I have one jacket that is too big for me now and creates the same effect. Theres also the obvious of coming from the sport bike world. Took me awhile to get used to the fact that I can't cruise at 130mph on my Dyna.
You already know the answer those bars that feel so comfortable at showroom speed are not so good on the freeway.And yes this is why so many end up going with windshields.However a set of lower Sportster bars will make a world of difference.Also full face helmets are way more aerodynamic than half helmets or beanies.The **** style helmets are the worst.

My biggest issue with this whole deals is that I got in a bad car accident 4 years ago. I have nerve damage running the length of my spine and head. I got off of sportbikes for that reason. I guess I can try different bars and a good windshield. My bars make my hands go numb after 5 minutes or less(nerve damage and arm height) Sporty bars will be my starting point.
I took my mini apes off because of the same thing , went with straight risers and v-rod bars , it's the hand positions ( the bend ) on the bars that felt uncomfortable at high speeds like you got to hold on for your life , now no problems and i have more control over the bike ..
