This is a myth, apes will not change how the bike handles, they may change how you ride, but they don't change the bike itself.
This is so true!!!! I never understood why people this that adding apes to a bike makes the bike handle different. The apes don't change the geometry of the bike, just the geometry of the rider where your arms and hands are located higher the usual, which is what will change the way you ride/handle the bike, usually causing the rider to slow down and enjoy the ride more, your chest is not very areodynamic and makes for a good sail.
To the O.P.and back to the topic at hand.
I have my bikes rear end lower with the Burly shocks and the front end is still stock. Never noticed any difference when riding other then that I can get my feet flat on the ground when stopped. When parking the bike on an uneven surface (dirt, grass.....) I do have to find a low spot to put the side stand on so the bike doesn't stand straight up.
If you have already lowered the rear end and want to figure out how tall you want to go on the bars. Pick up a broom stick, get on the bike, close your eyes and hold the sick in both hands in front of you where you are nice and comfy, have a friend measude from the riser to the broomstick. This will let you know how tall you (naturally) want the bars to be.

after all your comments I will sure keep the bike with the rear lowered only, or at least i'll wait till next summer and try it like that before buying a drop in kit.
As for the apes i'm still undecided 12's or 14'' and I don't even know wich ones yet... I'm looking at burly narrows or road 6 customs..
Are the lowering blocks that I see on e-Bay good enough for lowering or do you really need to go for reduced length rear shocks?

I haven't used or seen anyone that has used lowering blocks, but I can tell you that many, many people will tell you to stay away from them. Much easier and in the long run I would say it safer to just get the shocks and do it the right way.
