I am 5-11 and run 18s, Remember its only a few bolts to adjust the bars and tilt them back or push forward to change riding positions. IMO always go 2" higher than you think...
When ya got a buddy over (or wifey/gf) go sit on the bike, close your eyes, and put your hands up in what you imagine is the perfect position. After you've picked the position and height has been measured open your eyes. Do this two more times. I'm betting you're gonna be @ 16's.
I'm 6'3" and have Todd's 12" Apes, my arms are about level when when riding. I wanted 14"s but got the 12"s for $50. At times my hands start to fall asleep & tingle from the lack of blood flow. I end up riding one handed as I shake the other to restore blood flow. As far as looks I like 14-16's but I don't want my hands tingling any more than they do.
That said I'm lazy and do nothing other then wrench on my rides and eat. If i excercised more often this may not be as much as an issue.
Get most my harley parts from ebay, bars would have been about $300 from Todd's. I won't even consider a purchase without checking ebay.

I like the idea of the 14" with large riser sounds easier to givr multiple inexpensive adjustments
Also thinking going black bars as someone suggested as they might look better with the fairing in place
A lot of different recommendations based on the person's height. It's a good place to start, but consider the seat you run with the bars (and suspension.)
Look at Robbie's bike then look at mine. Robbie's bike is slammed with a thin seat and 14" bars. (and freaking cool by the way!) Mine has stock ride height and a 16" setup, but my seat puts me much higher on the bike. (I'm 6'2")
With your Switchback and the seat we see in your profile pic, 14" or 16" bars wouldn't be too much of a stretch.

I'm 5'11" and have 16s on mine and love the look and height.
