If you stomp the rear brake pedal, it will lock up the rear wheel I promise you. I do that very same thing in a panic stop along with applying the front brake but not enough to lock up the front. I can then feather the rear brake so the bike doesn't go out from under me. Also I point the bike, usually to the right of the vehicle in front of me.
I take it you laid the bike down because you held the rear brake while the wheel was locked up...Same thing will happen if you lock up the front brake it will "tuck" the front end right before you meet the pavement. Shifting into first gear will result in the same lock up at 65. Seems like you would remember down shifting though...
It really is a matter of experience in riding. I rode on dirt for many years and it still helps me with bike control.
