I really don't think I could handle this bike at full throttle. The other day I was getting on the freeway or passing someone, or something, and just shifting by what I thought was normal, when I shifted into 6th gear, I looked down and I was doing 80. Whoa....gotta slow down.

This is a very controversial topic. You'll need a tuner to change the idle speed. People will tell you that (A). You'll starve your engine for oil, and (B). Your alternator won't keep your battery charged.
I debunked B by looking at SEPST data and comparing voltage at my lower idle (I believe 850) to voltage at 60 mph. The difference was negligible.
I'm skeptical about the oil pressure as well, my 94 Low Rider idled about 750. In either case how long do you sit idling?

As was stated, why worry about when you are idling. Unless you got it to sit there and look cool, otherwise ride on and don't worry about whats behind you.
well the lower oil pressure isn't as much of a problem as hammering the hell out of the rods and crank with the constant acceleration and deceleration with every fire at such a slow rpm.
