Hey guys - will the tank and fenders from a 2005 wide glide fit my 2000 wide glide?

Since the frames were changed in 2004, the only answer I can give is "maybe". I think the tanks for the '04 and on might be a little longer and rear tire got wider, but I don't think that it changed that much. Front fender should be a pretty straight swap. The front fender numbers look good back to 1980 on the WG and the parts book for my '04 FXD show the struts for all models ending with a -96. That tells me they're compatible back to 1996 and that the bolt holes for the fenders have not changed.

So, while the fenders probably bolt right up, I'm not sure about the tank.
