On a serious note, what you're suggesting with pipes/Air filter and a tune shouldn't affect anything, meaning I can't see how it'd break your bike if you go with a good proven combination. You could get a Powervision w/ Auto Tune and get a nice tune out of that with some work. The thing about Warranty's is they have to prove the modifications you made broke the part in question so if your brakes or speedo crap out they can't deny it because you added an exhaust system. And if your crankshaft or oil pump decided to take a dump, again they can't really point the finger at an exhaust system + A/C + tuner. They would try though.

Buy the PV from Fuel Moto. Tell them up front what parts you have on the bike. They will load the PV with a semi custom map. Then go run auto tune for a few hours and send the resulting map back to Fuel Moto. Tell them what you are trying to achieve and they will then customise your map and send it back to you.
I ran about 10 hours of auto tune on mine, then sent them the resulting map. The bike was running good, but I had an issue with decal popping. Jamie tweaked the map and now it's awesome. No pops, pulls like a train and sounds like the devil.
Highly recommended. I think if i had bought the PV without the Fuel Moto support I would have ended up frustrated and not knowing exactly how to tweak it properly.
255's are a good cam for your style of riding. Harley's from the factory are set pretty lean, what you are hearing is typical. What should happen is spark knock and the spark knock sensor should take over to rectify the situation. If it doesn't and it's happening all the time at all different rpm ranges then I'd take it in to get tuned (cycle city).
A good stage 1, with those 255's and will wake your bike up...
