If you were doing heads, but you're not so don't sweat the chamber part. At roughly 10.5 static comp w stock head chamber (as per your pistons) plus the .030 hg you will be around the 10.7 comp mark which puts you around 202 ccp (depending on deck height/carbon build up), but basically 202 ccp which is right on the edge in a good way for the 211 cams.

.030" head gakets are what we use here almost exclusively, the "no gasket" comment was just to make mention of what we had done on that paticular engine.
