2014 SGS, bikes got S&S 585 ez-starts, cam plate, lifters, quickie push rods, true duals with twin slash mufflers. Ness Big Sucker AC. Running a Thundermax. 25k on the bike, about 3k since I did the S&S kit.
Just bought the ScreaminEagle Stage 5 Tire Shredder kit for it and about to put it in.

Kit comes with SE 259 cams, SE lifters and SE perfect fit push rods.
Thinking about just selling off the "extra" SE parts (the ones above) and keeping the S&S ones I already got.
What would you recomend? Any of them "better" than the S&S?

I would keep the S&S lifters for sure. As for the cams it really depends on what you want out of it. The 259 is very torquey but falls on it's its face fairly quickly. It also runs hot. At 10.2-1 there are tons of cam options available to you.

Not sure how you can say the 259 is a torquey cam when it has a wider LSA and 47 deg intake close. The 585 is only 45 deg. Only way it will run hot is if the bike ain't tuned. Canned map? Maybe.

Yeah thats my mistake. I got the 255 and 259 crossed up. The 255 is what came stock in my S. That is a a torquey cam. I cant speak on the 259.
If you have V&H true duals, they will kill the horsepower- just too restrictive.
259 and the S&S 585s both work well closer to 10.5 static, but either require a good tune, with the 259 slightly better (3-5%) across the board.
The static CR of that kit is 10.2. Use a Cometic .030" head gasket instead of the HG that comes with the kit, and get it closer to 10.5. I'd stick with the S&S lifters, because that's a better product than the SE tappets.
