I personally think that the S&S is very easy to work on and tune. The real difference is in the throttle plate. I believe that a throttle plate produces a more consistent vortex behind the plate allowing for a better fuel mixture and a better mixture of F/A makes for a better burn and performance.
I think I'm leaning toward the S&S for simplicity. I'm not real partial to any air cleaner the S&S looks fine to me. Maybe if I change it, I'll get les flack over my hypercharger on the forums
The tear drop a/c with spacers for a 4" K&N filter will give you all the air you need even at 6500 rpm...

Side note, depending on your custom tastes, S&S seems to have more options for air cleaners etc, Mikuni has some options but I feel less. But if you are just going to run what comes in the box, this is a non-issue.
For the record, Mikuni offers an adaptor which allows you to mount ANY air cleaner intended for a CV carb, and there's lots of them out there.
mikuni the very best in overall perfomance 1000s of dyno runs on race bikes proved that to me - the power output is Linear power / smooth and direct lots of adjustablity
S&S is aggressive in its delivery some like that it jumps into the GO - road racing its usless - street thug its just fine - lots of tuneability - lots of Stupid smoaking mirrors add ons but some have to have the latest and thats it -- have hundreads on bikes great unit if that what you want
CV best in fuel usage - slow to produce power - mild mannered easy to tune and it stays, the type of unit for most as it never needs anything for the most part
can be programed for use on other motors easy lots of parts available
I like S&S so much I bought mine with an engine attached, although mine's a G. Whichever you go with they will benefit by being set up by an expert, rather than in the backyard - unless you're already an ace doing such things! The EFI brigade still don't seem to grasp the benefits of a dyno-tune, but experience with my S&S is entirely positive.

So when you bought your carb it came with a free engine right!!! I will keep my eyes open for those deals.
