Default Jet size

I'm checking to see if 185/42 jets look right or do they need to be changed to a different size?

I go by how it runs and spark plug color. Smooth throttle from idle up, no popping, and a good plug color, I wouldn't do more than tweak the mixture screw. Before doing anything to the carb, I check that the air filter is clean, and no intake/exhaust leaks. From the factory, they run about as lean as possible; I've put a size larger low speed on an otherwise stock bike, adjusted the mix screw, and it ran a little smoother. They'll sometimes run a little cooler at low rpm, too. That's a minimum thing to do when you put lower restriction mufflers on, but seldom do you need to change the high speed jet unless you've done some motor work; start changing things in the heads, and you can get complicated on the carb. When they run good, anything else depends on how much you want to spend, not any limits on that.

Depends on what state of tune the bike is in, I would go 45/185 on a stock bike, my Wide Glide (K&N Filter, S&S mufflers and EV27) ran 48/200 with 2 shims under the needle and B6 NGK plugs.

It was tuned for Cali but it will stay in mostly in Missouri.

Joe, sort out your pickup first, there's a good chap! Is your bike a stock Cali spec?

Back when I had the CV carb on my bike, I ran a 45/185 combo with a stock cam/compression ratio, SE air cleaner and Kerker 2 into 1 exhaust.

My bike came with a 42 slow jet, but would hiccup and cough on deceleration in "cold" weather (below 65 F).

Since I know nothing of your setup, I cannot make any more recommendation than to tell you what worked for me.

Great recommendation, maybe a 45 would help a little with the cold starts.

If you're staying in MO it would be worth ripping all that stuff off and giving the poor thing a bit more fresh air, perhaps consider an SE air filter - after - well you know that line!
