Your bike looks pretty similar to what I am trying to do with mine. I am even thinking of switching out my Ape hangers for more standard handlebars like yours.
Although I have my Ape hangers racked back a bit and it creates a very comfortable riding position.
My handlebar's are the stock bars that came on the FLSTN or Fat Boy from that era. I forget the part number (now obsolete anyway), but they were the last bar fitted to the Shovelhead Electra Glide. Low and wide, but I find them comfortable because they let me lean slightly forward, which is easy on my decrepit spine.
