How about some details on that thermistor and maybe a pic or two? I've looked into doing that very thing with mine. Only saw one guy on the internet who posted doing it. I took a bad sensor apart once and still can't quite figure out much about it.
I've also tried to find out who really makes it. The closest I can find is one of the Italian motorcycle manufacturers made it for HD. Other sensors are made by Standard Motor Products, just not that durn temp sensor. The specs you were talking about are in the FSM. I've seen them.
I don't think I have a pic of it. The thermistor itself is just a little thing that kinda looks like a small cap. The ones I used would probably not be the ones you want. I have full control over the values the ECU looks for and how it interprets them. You would need to find a thermistor that matches the temp curve of what the stock one is.
It's one of those 7500. Just gotta look for it. They sell for under a quarter each, but you have to buy $15 worth of stuff, if I recall. So, get a bunch of them and sell for profit.
