I think this is a hobby project and someone looking for some fun when we are locked away.
Good luck and please post a ton of pix. How do the cylinder walls look? Smooth? See any cross hatching? Any lip? I wish you would have done a compression test with and with out oil. Did you?

Cylinder walls look great actually. Removed the carbon and lapped valves as they were pretty grimey. Valve guides look good. New gaskets on the way. Going to pull the trans and paint the frame, then put it all back together and cruise!

Do you have any before pictures of that head? What did you use to clean it so well? I'm asking because I tried SeaFoam and other valve cleaners, but the heads from my '93 Ultra (w/47K miles on it) just laughed at that sh*t! I ultimately resulted to using walnut shells in my media blaster.

Honestly, I hit it with AutoZone engine degreaser and a brush head bit on my drill. Worked great.
Picked up some goodies and pulled the cylinders I found some scraping. I am having them mic'ed and looked at tomorrow to see if they need to be honed or not.
