Bike ran perfect last year this year though it sat for months before I got to it this year noticed didn't need enrichener to cold start which was unusual for this evo. About three miles down the road stalled on take off and kept stalling unless held throttle way open.
Went through carb didnt find anything but a little crust under accel pump diaphragm. Puta rebuild kit into it and still have same prob. Enrichener works now engine idles ok but snap throttle and wants to stall let go of throttle goes back to idle fine. Tried to go around the block feathering throttle and seemed when it got hot it stalled out and took a while to get it started again having to keep rpms up to run
I just want to note that it got Ultima Programable Single Fire kit two years ago but it ran great
Not sure if im missing something in carb now but didnt find any orifice plugged
Could this be a float issue ?
I am not thinking you have a float issue at this point.
You say it wants to stall when you snap the throttle.
If you slowly apply the throttle does it want to stall?
If it wants to stall when opening the throttle slowly then your idle/intermediate circuit or the intermediate jet itself may be restricted (partially plugged). Maybe the transfer ports in that circuit are plugged.
If it will run okay slowly applying the throttle, then perhaps your accelerator pump is not squirting the extra fuel needed when the throttle is opened more aggressively (as you say, snapped open).
Does your accelerator pump squirt fuel as soon as you start to open the throttle?
If the pump is not squirting fuel then it may be not in service (S&S has instructions on their website for adjusting the accelerator pump).
There are other things that may prevent the pump from supplying fuel. Is the supply passage to the pump plugged? Are the two check ***** and their passages dirty/damaged or plugged respectively? Is the accelerator pump nozzle or the pumps discharge passage to the nozzle plugged?
When the pump is working properly, you should see a nice fan spray coming out of the nozzle as you start to open the throttle.
Note that the pump does not spray throughout the entire opening of the throttle, only as you begin to open the throttle and for only part of the way as you open the throttle. How long it squirts fuel is determined by its adjustment.
If you suspect any of the circuits (passages) of the carburetor are plugged and you can't clean them out with a spray can of cleaner, perhaps you can find a shop that has a sonic cleaner to dislodge the restriction.
Just some thoughts that may help you...

what I see is accel pump is pumping with throttle and at same point engine stalls accel pump has been rebuilt new ***** seals springs plunger and diaphragm that came in master kit.
slowly applying is better but even opening throttle slightly fast it wants to stall.
Going to tear down carb again and check passages again perhaps missed something.
Question though NAPA 6402 carb cleaner safe for this carb body ?
Sounds like you have a clogged up jet. Clean them all out properly. Make sure the intermediate is clear. Any carb cleaner won't hurt that carb. Look through the jets and make sure they are clean. Everything says don't put anything through them, but if I have a gunked up one, I put a very fine wire through. Blow out all the passages, especially the idle one. Make sure the idle mixture screw is adjusted properly. .
question about these intermediate jets, #31 came out of the carb and I can see light through it but it seems to be choked down in the center of the jet
I can slip a 1/16 drill into the opening of the jet but only to the midway point of the jet body. Im assuming its a .0310 jet orifice size that im seeing,
All intermediate passages are open and clear but this stall with quick throttle persists
Dunno on the jet size. I forget how they measure that stuff. But 1/16 is .0625", not .0310. Like I said, I use a piece of small wire to rotor-rooter them out. Soak them first in carb cleaner.
What fuel petcock are you running and have you done a fuel flow test to the carb? Next time it stalls on you turn off the fuel petcock and pop the brass plug on the bottom of the float bowl to confirm your not running out of fuel.. Carry a cap off of a paint spray can and a 5/8" wrench. If the three cap is half full it's not a float issue..
The wire out of a twist tie might do the job cleaning out the jet.
Just try to not damage the jet doing that.
If you use a welding tip cleaner be aware it has a section that will file the inside of what you run it through.
The idea is to clean out the junk, not resize the jet.

yes .031 is much smaller drill close to 1/32 Ive got torch tip cleaner set has wire that size passed through no issue there and all passages clear
Cant find any fuel issue here moving on to ignition related
