Just bought a 80" brand new from WV Harley. Swapping out the cam to a EV 27 and going with a Dyna ignition. Also, putting in the Taper lite adjustable pushrods. What type of power gains am I to expect above a stock motor. Are the pushrods going to make a difference?

Pushrods will make no power difference but much quicker and easier to change the cam. The ignition, in single fire mode, will make it much smoother in most of the RPM range. The cam will wake it up tremendously.
