It doesn't help to talk about octane ratings, as North America uses a different system to Europe. Your 95 octane should be fine, which is what I use here in the UK, also when riding in Europe. In addition their fuels have different additives to ours, so it is not easy to make comparisons.
I currently have an S&S motor, which was set up by the manufacturer for their fuels. I had it dyno tuned after it was fitted and broken in, and ignition timing and fuelling were both adjusted slightly, to make it run better on our fuel.
The EVO combustion chamber is radically different than the Shovel it replaced which had a hemispherical combustion chamber. The then new EVO bathtub combustion chamber included squish area to facilitate complete burn of fuel. That said I would still not run anything less than 91 octane US in an EVO. Some people do, I never did....
