Default Plug Color Jetting Issue

Hi, I've been lurking around here for sometime now without a post and wanted to say hello. My question is on jetting. I am confused with the plug readings. They are still white. I mean no shade at all after a few runs. If I add more fuel to the mix (shimming, jetting, mixture screw) the bike runs like crap with tons of hesitation. So why the white plugs with the bike running good with the current setup? And I mean white on the low and high speed circuits. Should I disregard the plugs? What’s going on? Should get some coloring...

Do you have torque/power cones at the header end of your drag pipes? If you don't and add them, you may be able to richen up your air/fuel ratio a bit without impacting the bikes performance.
Before I switched to a Fat Cat (to quiet the bike down some) I was running Rip Saws, 1-3/4" OD drag pipes with power cones, with my 103" engine. Bike ran great and the plug check looked okay. Took me 2-1/2 years to change to the Fat Cat. I loved the performance but couldn't take the outrageous noise anymore.

My question is on jetting. 2000 Fatboy stock except for K&N back-plate and filter (stock airbox eliminated) and 1'' 3/4 drag pipes with thumbscrews. I know, I know... ruining my low to mid ponies but I gots' to have em'. To the issue.... Currently I have a 48 pilot, 195 main, no shims on the needle and the bike is running best with this config. Pulls good, no backfires, no coughs, no black smoke, no hesitations. Best as in if I go down on the jetting, the carb spits and coughs. If I go up on the jetting I get bad hesitation when I crack the throttle. I tried all needle positions and mixture screw settings when going up and down on the jetting.
So my confusion is:

with todays fuel you are not going to be able to read your plugs easily unless you have a plug reader. If you are looking at the white procelin nose than you can expect it will be bone white. you will know if you are lean as your bike will spit back thru the carb.

No cones in the ends just thumb screws at 90 degrees. When you were running the Rip Saws was the air box stock, modified or removed for a face plate?

So are you saying it's going to take a good amount of miles before the porcelain shows some color if the bike is indeed running correctly or rich? What is it with the fuel, the ethanol?
