I asked Mark at D&D tech support and he said the flow does not change. The difference is the outer skin of the baffle. I was concerned that by going to the quiet baffle performance would suffer but he assured me that was not the case. I have a set of fatcats with a quiet baffle on order and am patietly waiting for them to arrive. I'll post my opinion after I receive and install them.
