Saddle soap is great for cleaning the leather but won't do sh*t for protecting it. It does in fact strip all the protectors off when cleaning.

Neets foot oil has a distinctive odor when wet, and what ever is in contact with neets foot oil will smell the same. I've used mink's oil and bear grease with fairly good results.
I polish my boots once every 2 months, and I wear them in the rain and snow. 1 pair I have had for 5 years and they still look good. The other pair I have I've had them for 2 years and they get polished the same, and they still look good too.
...Mink oil. I've been using it for 40 years now and have always been happy with it.
+1 for mink oil, probably also been using it for ~40 yrs. I rub it into my boots, jackets, gloves, any leather goods once or twice a year. Keeps everything soft and looking good, even helps with water resistance.
