I like vests. The pockets are handy, it keeps my shirt from whipping around and it keeps me warm when it too cold for just a tee shirt but too warm for a leather jacket.
I suspect you have a motive behind your question? The uses for a vest are many. When not wearing a jacket, a vest protects your core from road debris and makes your shirt behave. Not many places to put stuff on a bike, the vest has pockets. Besides the tradition aspect, it provides a place to put patches and stuff if you want to participate in the biker world and make a statement about who you are and what your about, Or perhaps freek out the citizens.

I ride with a group that does patches. A vest gives me a place to put them. In warm weather it's a good place for keys, EZ Pass, cigars, or whatever.
I don't wear mine often, but it's nice every once in a while.

All of that for me. I wear mine every time I leave the house. But I also have a lot of memorial patches on mine for fallen brothers and sisters. Its a daily reminder for those around me who have no clue what goes into the freedoms that they have and are letting go of.
Please help me out here - what's the attraction bikers have to vests? and no, I don't want to hear they are "cuts" or outlaw gang gear or anything like that. I see a ton of people wearing vests, wearing vests over warmer jackets, taking shorts off so they can wear their vests comfortably etc etc etc
There's gotta be something practical to it that I'm missing. My arms seem more exposed to the weather... I've been tempted to wear arm warmer, chaps, gloves, bandanas, stuff like that for warmth, but the vest seems to be the odd item of clothing. I must be missing it's practicality because just about everything else I've seen about "iconic biker clothing" has roots in real practical use.
A vest does have a practical purpose. Basically what some others have already said plus a very personal reason for me. My son was KIA and I have a big patch on the back of my vest and pics of him and his family in one of my pockets that I carry with me every time that I ride.
