Congrats I think Harley has a winner with this bike, I like it a lot.

I think the new Slims are great bikes and are growing on me by the day.

Street Bob and Low Rider are still very similar, minus the side-shocks and smaller tank for SB. I think the small 3.5 gallon fuel tank is growing on me from an aesthetic view, it enhances even more the Bobber looks of the Street Bob, but I cannot accept it for the practical ones. Hell I bought a XL1200C instead of an X for that fuel tank reason. Hence if I had cash today I might go for a Slim. But we will see, decisions are taken when you need taking them. I am still 50/50 on this one.
We see how it goes if I make the change, there is a difference of 1.5 gallons instead of the 2+ gallons between the C and X. Which is not as bad as it looks.

The new Fatbob I think is a winner even though I am not a fan of the new model, it is a win-win bike from Harley kinda a cross over between a custom and a naked bike like a Ducati Monster. The good news as the 2018 Softail Fat-Bob rides super brakes as it should and handles like a beast.
May be if Harley had no limited budget in 2007 this is how the first Fat-Bob would have been born like. But who knows.
The Dyna Super Glide was very similar to a Low Rider so I do not see that model make a come back. What I see doing a come back is the Wide Glide, may be a mid model 2018 launch, as at the moment the line up does not have that pure chopper model as the WG.

I never tide two up so I can't advise you about the passenger seat, But i already replaced the stock OEM seat with a HD sundowner which is much more comfy and has a bigger pillion.
the bike itself is the most comfortable HD I've ever ridden. This particular bike will be used for short commutes to and from work with an occasional adventure ride on the weekends.
