I live in East Tn and I'll tell you any road that leads from TN to NC that isn't the main highway is great. The famous roads here are The Snake (421) and a little more towards Knoxville The Dragon. But those can be a little much if you want a pleasurable ride . The gems are literally any back road that can take you from TN to NC. A lot of dudes at work like to ride the Blue Ridge Parkway but expect people if you are there on the weekend. Erwin is a town that is at the end of TN and a bunch of roads there go over Roan Mountain and that's a heck of a fun ride. They're all good man.
Edit. A lot of roads lead to Roan Mountain but they all funnel to that same channel. Really only that road over the mountain but it's a great ride. Twisty, then straight, a lot of look out points
