As a life long Floridian I can honestly say you are spot on!!! You really have to look long and hard to find exciting rides in this state. Only redeeming factor is year 'round riding. However, like you, I did live about 13 years in the heart of the Smoky Mountains and with my electric gear rode all year long. Of course winter riding in those mountains is a pretty lonely affair. Many times I crossed the entire Smoky Mountains Nat'l Park in the dead of winter and never saw another vehicle of any kind, let alone other motorcyclists. Those mountains are total nirvana to a biker! However, I love my boating and fishing as much as my riding so I moved back to Florida and will never leave again.
Ya.... That's a thought... I do like boating and fishing. It's just never been in the cards for me to take either up seriously. By the sounds of it... I'd probably have to taking up new hobbies/activities (most likely boating and fishing) to make up for a crappy riding environment.
I just finished with a UTV plow, tractor snow blower and a shovel nearly three hours of snow moving. Not removal, cause it was just moved about 10-50 feet.
Waiting for the grader to make a dent in the road.
My neighbor just bought and is building a home in the Villages. He came over and told me it was 80 there today.

The roads in FL are not particularly exciting, but the scenery along the Atlantic coast is pretty nice. I absolutely
love riding up and down the coast! Lots of fun places to see and stop at as well if you're wanting to.
I rode a bit of FL's west coast too. Not the same, but still nice.
The interior of the state is flat, straight, and boring. But in winter, it's still WAY better than looking outside at
3 feet of snow and feeling -10F temps which is what I have to do every winter here in WI.

Southern states are definitely a better 'crappie' environment in my experience.
I have moved from flat-a$$ Texas (Dallas area) to Charlotte recently, so I'm spoiled, but I can't imagine riding in FL for more than a destination trip. Boring is an understatement, and drivers are simply horrible.
