I'm in MI. I never really stop riding. If I stored it for more than a couple of weeks, I'd put my full cover over it just to keep the dust off of it.

I keep my shop around 15* when I'm not using it , but crank it when I work . The bike sits in a safe place uncovered , plugged in , until I start making dust , that's the only time I throw a couple sheets over it . I do have a habit of sitting out there , drinking coffee and listening to music , so I like to see it .

No cover. Sometimes I even keep the bike outdoors and in the rain. She's old and still runs great. Patina is cool. Most of the time she's in the shop though and the dust get's blown off when I ride.

I live in the Midwest and I do some work in my garage. So I put a cover on my Sporty and then I'll lift the tires off the ground (to prevent flat spots). I just got my Dyna this year and I don't have a cover for it, but I'll likely throw some moving blankets over it during the off-season.
This way if I'm at my workbench, any debri/dust/shrapnel won't hit the bike directly.

I always keep mine covered if it's being stored in the garage for more than a few days...but I also add an extra protective layer of a couple of old bed comforters under the HD Bike cover.
Why?
Because things happen and I don't want to uncover the bike to find a ding in the metal. Plus it keeps the dust off.

Make sure to check often it if covered. I just pulled my Suzuki out out of the shed, had it covered and hadn't ridden for a couple months, rats chewed through the whole wiring harness at the biggest point under the tank. The cover just made it cozier for the little bastards. Paint looks good though. I keep my RK in the garage uncovered and try to ride it everyday.
