If you are looking for more than just a service manual you may want to checkout Fix My Hog. They sell DVDs on how to do many of the common repairs on Harleys.

Everybody that has ever turned a wrench learned by picking up a tool and asking what is this for.

You learn by doing. If you don't have someone to ask get the service manual. What you are planing is the way to do it.

Buy a good set of tools. My box is stocked with Craftsman, and Snap On.

Now get your hands greasy. I got married with grease under my fingernails. 1974. Carol just shook her head.

Rebuilt a 350 Chevy in the kitchen one year. Man we got in a fight about that one. Used her pans for cleaning.

start with easy stuff, oil changes, primary adjustment, etc. Work toward more difficult tasks. You'll gain a little confidence every time you do something right. Add accessories (grips, pegs, lights, etc.) as a way to get comfortable putting a wrench to your scoot.
First get the necessary tools. there are several posts here to get you info on what tools to start with.
Take time to prowl thru the forums - there is a lot of helpful info and many questions answered.
