What to See...Where To ride
I'm near Medford, OR, so I've traveled all of those roads many times. I like that route a lot.
Be sure to bring warm clothes. Mt Shasta/Weed is about 4,000 feet and so is Klamath Falls, and you cross the Cascade Mountains between them. Now I don't recall anything higher than 6,000 feet in the passesbut it can get pretty crisp up there in the mornings and evenings.
I doubt that you'll see any ice on the roads in late Maybut be paranoid anyway, especially on shady curves until you get back down. There's lots of snow this year and even though the roads are cleared up there, melting snow run-off crossing the road can freeze at night.
If you're really paranoid or if the weather stays almost record cold, you can always stay on I-5 N. to Medford and then take state hwy 140 to Klamath Falls. It's just as gorgeous, takes another 30 minutes, but the highest passes are 5,000 feet and then just 2 of them with a quick up and down.
I-5 and 140 are much better roads and I think better maintainedthan 97 right there, again if you need an out.
Medford is only 1200 feet - very mild weather.

Check out Zion, Bryce Canyon (just across the highway), Logan Canyon from Logan, Utah is a nice ride, up 75 to Stanley and down 21 to Boise is a good ride and keeps you off the Interstate too. Be Safe and have a good one.
